In order to nominate a chef please email the chefs contact information, and three reasons why you feel your nominee should be a candidate and anything else you would like to add a short bio for example – and/or other accomplishments.
The deadline for submitting is August 31st. Email your submission to
President@acfla.org
Once the Chef of the Year committee has qualified the nominees the membership will be asked to vote. The Chef with the most votes will become the 2008 ACF / LA Chef of the Year.

— the largest public wine tasting ever to hit Los Angeles. With over 100 participating wineries and at only $35 per ticket, this event is sure to sell out. The ACF 2006 Western Region Conference is right around the corner - February
2-6 to be exact. February's a great time to escape the cold winter weather and head for
"Paradise" as the 2006 Conference will be held on the Gold Coast of Hawaii Island.
Hosted by the ACF Kona-Kohala Chapter Chefs de Cuisine, the 2006 conference location
is slated for the Hilton Waikoloa Village
Resort.
Filled with educational clinics, specialty sessions featuring unique Hawaiian

Whitney Werner Receives
Presidential Medallion from ACF President Ed Leonard in
Colorado ! Whitney Werner, CEC, is Chef of the Year for the
ACF Chefs de Cuisine Association of California 2002. Currently
executive chef at The Beach Club in Santa Monica, Calif. Chef Werner
began working in restaurant kitchens at the age of 15 and brings 25
years of experience to our chapter. He serves as chapter second vice
president, hosts the Escoffier dinner, and holds classes for junior
members. A graduate of The Culinary Institute of America, he started
in pastry as part of the opening team of the Ritz-Carlton, Laguna
Niguel. He opened and operated restaurants for the Hilton Hotel
Corporation nationwide and worked at the Ambassador Hotel in Taipei,
Taiwan, updating menus with current culinary trends. Chef Werner was
awarded four stars for his French-Russian cuisine at Le Bel Age
Hotel in Hollywood before opening his own restaurant, Whitney’s,
on Montana Avenue in Santa Monica, where he enjoyed many successful
years of attracting a high-profile, celebrity clientele. Chef Werner
has been a culinary educator at the Los Angeles Culinary Institute.
Currently Whitney is known for bringing his "Whitney's"
concept to The Beach Club in Santa Monica with resounding success.
Chef Whitney is also a driving force for our chapter in the Chef of
the Year Los Angeles Culinary Competitions. Providing boundless
passion and vision! Well done and congratulations Chef Whitney!

Award goes... to Richard L. Morgan,CEC,AAC
Among his many accomplishments, Chef Richard was an
Executive Chef years ago at the Brown Derby in Los Angeles and is
also the coordinator of the "Original Cobb Salad" which
the Brown Derby was famous for.
Chef Morgan recently gave a demonstration of the
"Original Cobb Salad" for culinary students at the Art
Institute in Santa Monica. Click

behalf of our chapter we are so honored to have among our membership
Chef Richard Morgan. As many of us know chef Richard's life time
dedication to the culinary profession and fulfilling the role and
mission of American
Academy of Chefs is without question. An excellent chef, a kind
and personable man, a teacher, a mentor, who shares his knowledge
and wisdom freely to those who have had the fortune of meeting him.
On behalf of all of us we and our longest standing chapter member,
chef Richard L. Morgan,. congratulations and God bless you always.
This award, formerly the Hermann G. Rusch
Humanitarian Award, honors chefs who have demonstrated the highest
level of commitment to both ACF and the culinary profession. Such
chefs, through their involvement with and contributions to ACF and
our craft, have advanced the culinary profession and ensured the
enrichment of students, our members, and those in our profession.
Any one of these candidates is worthy to carry on the proud
tradition of the chef for whom this award was named in 1993,

ACF Announces Candidates for 2004 Regional
Chefs of the Year
The ACF Chef of the Year Award recognizes an outstanding
culinarian who works and cooks in a full-service dining facility.
This person has demonstrated the highest standard of culinary skill,
advanced American cuisine, and given back to the profession through
the development of students and apprentices. The following are
regional candidates for ACF's national Chef of the Year award, which
will name the U.S.A.'s Chef of the YearTM
for 2004.
One candidate from each region will be chosen as this year's
Regional Chef of the Year and announced at the respective regional
conference. The four finalists will compete in a cook-off at the
2004 ACF National Convention in Orlando, Fla., in July. The awards
are sponsored by UBF Foodsolutions North America.

The 2004 Installation Dinner at Los Angeles Mission
College was a success!

The Los Angeles Chef of the Year Award

first chapter to change from a
popularity vote to an intense "iron chef style"
live cooking competition. The new yearly competition is a positive
change and well regarded event for Los Angeles area chefs, restaurants,
hotels, caterers, educators and culinary community. Nominees
are a diverse
field of highly regarded chefs, many from well known local
establishments, hotels and the educational community. Nominations
are open for Los Angeles Chef of the Year 2004 no membership
required. The Los Angeles
competition is a media intense event for participants, sponsors and
the culinary community as well as an excellent educational

of the highlights on the show floor was the American Culinary
Federation’s First Annual Chefs de Cuisine Association Culinary
Competition. Winning first place in the 2003 Western Foodservice
& Hospitality Expo-LA Chef Table Luncheon was Team Desert
Springs led by Steve Ferraro of the J.W. Marriott Desert Springs
Resort & Spa, Palm Springs, CA. The 2nd place team
was Team Keoki, led by Joseph Orate from Grossmont College. Team
Keoki represented restaurants in the San Diego, Orange Coast and Los
Angeles regions. The 3rd place team was Team Beach led by
José Leut Jimenez from the Santa Monica Beach Country Club. Many of
